Ingredients:

4 cups of water

2 teaspoons of Better than Bouillon vegetable

3 cloves of garlic (diced)

1 raw carrot grated

2 bundles of Spinach whole

1/2 of sweet peas

1 tablespoon of unsalted butter

1 tsp sea salt

1 tsp of pepper

Instructions:

  1. In a medium skillet, sauté 2 bundles of whole spinach and 3 cloves of diced garlic with 1 tablespoon of unsalted butter until wilted.
  2. In a pot, bring 4 cups of water to a boil. Add 2 teaspoons of Better than Bouillon vegetable base and allow it to fully dissolve.
  3. Stir in 1 raw grated carrot and 1/2 cup of sweet peas into the pot.
  4. Add the sautéed spinach and garlic to the pot and let the soup boil for a few minutes before reducing the heat to a simmer for 5-10 minutes.
  5. Season the soup with 1 teaspoon of sea salt and 1 teaspoon of pepper, adjusting to taste.
  6. Serve hot and enjoy this nutritious and delicious spinach soup!
