I decided to surprise my partner with a healthy and sweet snack as he often craves snacks. Intending to incorporate healthier food choices, I tweaked a simple recipe despite lacking most of the required ingredients. I improvised and the result was amazing – a protein-packed snack that we both loved.
Ingredients
6 cups of broccoli florets
2/3 chopped dates
2/3 chopped cranberries
1/2 cup chopped walnuts
2 tbsp of hemp seeds
1/3 cup of diced red onion
Dressing
3/4 cup mayo (I used organic)
1/4 cup sour cream
1 1/2 tbsp apple cider vinegar
1/4 tsp of salt
1/4 tsp of pepper
To make broccoli salad, start by washing and chopping 6 cups of broccoli florets into bite-sized pieces. Add them to a large mixing bowl. Then, add in 2/3 cup of chopped dates, 2/3 cup of chopped cranberries, 1/2 cup of chopped walnuts, 2 tbsp of hemp seeds, and 1/3 cup of diced red onion. Toss everything together until the ingredients are evenly distributed.
Next, make the dressing. In a separate bowl, whisk together 3/4 cup of mayo, 1/4 cup of sour cream, 1 1/2 tbsp of apple cider vinegar, 1/4 tsp of salt, and 1/4 tsp of pepper. Once the dressing is smooth and well combined, pour it over the top of the broccoli salad.
Using a large spoon or salad tongs, gently mix the salad and dressing together until everything is coated. Chill the salad in the refrigerator for at least 30 minutes to allow the flavors to meld together.
When you’re ready to serve, give the salad another quick toss to redistribute the dressing. Enjoy!
